It is a non-washable coating that slows the rate of spoilage by retaining moisture in produce and keeping oxygen out, but it may contain epichlorohydrin and/or glycidol in fatty acid mono- and diglycerides (E 471) The presence of palladium, cadmium, and arsenic is also carcinogenic, so there are at least four different carcinogenic contaminants in the coating, which is even approved for use in USDA-certified organic produce.
 
Apeel Science was founded by James Rogers, a contributor to the World Economic Forum (WEF), with a $100,000 grant from the Bill and Melinda Gates Foundation, with other investors including the Rockefeller Foundation and the World Bank Group etc.

While reducing food waste and extending the shelf life of fresh produce are certainly sensible and worthy goals, the question is, how is this done?
 
Low levels of toxic residues are safe levels according to Apeel, but I think any exposure to toxic chemicals and metals is an unnecessary risk, and fresh, pure food is intentionally coated with something that contains toxins, even in trace amounts , also just adds to the toxicity burden, we already have a lot of pesticide residue issues, this coating just locks those toxins in and puts extra toxins on top.
 
One of the biggest question marks is whether this coating can penetrate the peel, and since the coating cannot be washed off, is the pulp of the fruit or vegetable also contaminated with residue? We don't have an answer, according to Apeel Sciences the coating is "not expected" to penetrate beyond the peel, isn't it? This means they don't know, don't want to say or can't.
 
More importantly, if the produce is coated before ripening, will it be fully ripe? Many fruits and vegetables are picked and shipped before they are fully ripe, which is one reason why so many fruits are tasteless and have the wrong texture. The best way to gauge the freshness of a fruit or vegetable is by visual inspection, if it is sealed with a coating that delays the rotting process, it will be impossible to tell how long the product has been in storage.
 
The Apeel founders say they will soon transition to using synthetic biology instead of extracting ingredients from real food, and there are many signs that they look ready to move into genetically engineered synthetic biology and are also working to turn food into vaccine vectors.
 
The Gates Foundation has also committed $985,161 to developing another crop coating called Invisipeel.
